Instructions

Step 1: Prepare the Vegetables

Wash the cucumbers, tomatoes, and onion thoroughly.

Slice the cucumbers into thin rounds or half-moons. Thinly slice the red onion so it blends easily with the other vegetables. If using cherry tomatoes, cut them in half. For larger tomatoes, cut them into bite-sized wedges.

Place all the prepared vegetables in a large mixing bowl.

Step 2: Prepare the Homemade Marinade

In a separate bowl, measuring cup, or small jar, combine the vinegar, olive oil, sugar or honey, salt, black pepper, oregano, garlic powder, and red pepper flakes if desired.

Whisk thoroughly until the sweetener and seasonings are evenly incorporated and the dressing looks well combined.

Step 3: Combine and Marinate

Pour the prepared dressing over the cucumbers, tomatoes, and onions.

Using a large spoon or salad tongs, gently toss everything together until the vegetables are evenly coated. Be careful not to crush the tomatoes.

Cover the bowl or transfer the salad to an airtight container.

Step 4: Chill Before Serving

Refrigerate the marinated vegetable salad for at least 1 hour before serving.

For a deeper flavor, allow it to rest for 4 to 12 hours. Give the salad a gentle stir once or twice while it chills so the dressing continues to coat the vegetables evenly.

For the best texture, serve the salad chilled.

Tips for the Best Marinated Vegetable Salad

  • Choose English cucumbers: Their thinner skin and smaller seeds make them especially suitable for marinated salads.
  • Slice evenly: Similar-sized pieces help the vegetables absorb the dressing more consistently.
  • Drain excess cucumber moisture: If your cucumbers are particularly watery, lightly salt the slices and let them drain in a colander for about 10 minutes before adding them to the salad.
  • Give it time to marinate: While the salad can be enjoyed after an hour, several hours of refrigeration allow the flavors to develop more fully.
  • Adjust the dressing: Add a little more vinegar for extra tang, or increase the sugar or honey slightly if you prefer a sweeter dressing.
  • Add fresh herbs before serving: Dill and parsley bring a bright, fresh flavor that complements the vinegar-based dressing beautifully.
  • Add feta at the end: If using feta cheese, stir it in shortly before serving to help preserve its texture.

Recipe Note

If you want to keep this salad completely vegan, use granulated sugar or a plant-based sweetener instead of honey, and omit the feta cheese.

Because tomatoes and cucumbers naturally release water as they sit, the salad may become slightly softer after a day or two. For the freshest texture, it is best enjoyed within a few days.
