The result is a satisfying homemade dinner that’s flavorful, comforting, and easy enough for any night of the week.

Why You’ll Love These Mongolian Ground Beef Noodles

There are plenty of reasons this recipe deserves a spot in your regular dinner rotation:

  • Ready in about 30 minutes
  • Uses simple, easy-to-find ingredients
  • Packed with savory and sweet Asian-inspired flavor
  • Budget-friendly compared with steak-based dishes
  • Easy to customize with vegetables
  • Perfect for busy weeknight dinners
  • Works with several types of noodles

The combination of ground beef, garlic, ginger, soy sauce, brown sugar, and hoisin sauce creates a rich glaze with plenty of umami flavor. A small amount of cornstarch helps the sauce become thick and glossy, allowing it to cling beautifully to the noodles.

Ingredients

For the Beef and Noodles

  • 1 pound (450g) lean ground beef
  • 8 ounces noodles, such as linguine, spaghetti, lo mein, or ramen
  • 4 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon vegetable oil or toasted sesame oil

For the Sweet and Savory Sauce

  • ⅓ cup low-sodium soy sauce
  • ⅓ cup brown sugar
  • ½ cup beef broth
  • 1 tablespoon hoisin sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • ½ teaspoon crushed red pepper flakes or a drizzle of sriracha, optional

For Serving

  • 4 green onions, thinly sliced
  • 1 teaspoon toasted sesame seeds
  • Additional red pepper flakes, optional

You can also add vegetables such as broccoli, bell peppers, snow peas, shredded carrots, or mushrooms for extra color and texture.

How to Make Mongolian Ground Beef Noodles

1. Cook the Noodles

Prepare the noodles according to the package directions until tender. Drain well and set aside.

Reserve a small amount of the cooking water if desired. It can help loosen the sauce later if it becomes too thick.

2. Brown the Ground Beef

Heat the oil in a large skillet over medium-high heat.

Add the ground beef and cook, breaking it apart with a wooden spoon, until browned and fully cooked. Drain excess grease if necessary.

3. Add the Garlic and Ginger

Reduce the heat slightly and add the minced garlic and grated ginger.

Cook for about 30 seconds, stirring constantly, until fragrant. Avoid allowing the garlic to burn, as it can develop a bitter flavor.

4. Prepare the Mongolian-Style Sauce

Add the soy sauce, brown sugar, beef broth, and hoisin sauce to the skillet.

Stir well and bring the mixture to a gentle simmer.

For a thicker sauce, combine the cornstarch with cold water in a small bowl. Stir until smooth, then pour the slurry into the simmering sauce while stirring continuously.

Cook for a few minutes until the sauce becomes glossy and thick enough to coat the back of a spoon.

5. Add the Noodles
